IP Non-Restricted Pancakes

 
 


Ingredients:
1 pkg IP Crispy Cereal, crunched up
2 egg whites or 1/4 cup liquid egg whites
1/4 tsp baking powder
1/4 tsp vanilla
Cinnamon & Nutmeg, to taste

Directions:
Mix together in small bowl the following; egg whites, 1/4 tsp vanilla
Add in to cereal pkg the following; 1/4 tsp baking powder, cinnamon & nutmeg
Pour dry mix in to egg white mixture and combine. Add enough water to desired consistency.
Cook in pan as you would pancakes.
Serve with Walden Farms Syrup, enjoy!


Stuffed Mushrooms



1 and 1/2 pounds of ham julienned
1/2 packet of Ideal Protein Salt and Vinegar Ridges crushed
4 large portobello caps

... 3 cups of portabella mushrooms chopped
1 cup of cucumber chopped
2 cup of mixed greens
1 tablespoon of green onions chopped
2 cloves of garlic minced
2 tablespoons of Walden Farms Balsamic Vinaigrette Dressing
1 teaspoon of olive oil
sea salt to taste, pepper to taste

Marinate the 4 large mushroom caps with olive oil and garlic

Chop the remaining mushrooms. Slowly cook the green onions in olive oil marinade (from the mushrooms). Add chopped mushrooms to a pan and cook until all the water is evaporated. Add the chopped garlic and cook for one minute. Add dressing and ham, mix well.

Place the mushroom heads on a greased cookie sheet and stuff with mixture. Top with the crushed ridges. Bake in a 375-degree oven for 5 to 10 minutes or until lightly browned. Serve on top of the mixed greens with cucumber.
Chocolate Chip Oatmeal Mini Muffins

2 egg whites
2 tsp baking powder
1 packet chocolate chip pancake
...
1 packet maple brown sugar oatmeal
1 tsp olive oil
1 tsp skim milk
2 tsp sugar free Torani Brown Sugar Syrup (add a little more if you like it sweeter)

Preheat oven to 350. Mix baking powder into egg whites. Add pancake and oatmeal packets, olive oil, milk and syrup and mix well. Spray mini muffin tin w/Pam. Spoon batter evenly into 12 muffins. Bake for 15 minutes.
 
 

CUCUMBER BASIL SMOOTHIE
(IP Vanilla Drink)
 

 1 cucumber, sliced
2 oz freshly squeezed lime juice
...

1/4 cup basil leaves
2 tablespoons granulated Stevia
1IP Vanilla drink packet prepared w/4 oz water (or use a pre-made vanilla drink)
1/4 cup water
3 1/2 cups ice
Garnish: cucumber slice
Place all the ingredients in the blender. Using the ice crush setting, blend until all the ingredients are even and finely chopped, about 30 seconds.

Chef Verati's Chicken Meatballs & Herbs


8 ounces ground chicken
1 cup of Pepper minced
1 cup mushrooms
1 cup fresh spinach
1 teaspoon coriander
1 teaspoon basil

Mix the ground chicken and add fresh herbs. Make a ball and seared. Finish in the oven at 375 degres for 10 minutes. In a same pan, add Pepper and mushrooms and seared. When it’s almost cooked, add fresh spinach.

Rutabaga fries.
Have them with a nice Steak or with ground beef at night and it will feel like a "cheat dinner" without cheating!

The hardest part about this recipe is peeling the Rutabaga, so what you do is, you cut the Rutabaga in half and then in half again, don't feel bad that when you peel it you lose some of the white part, it's completely normal!

Measure the rutabaga peeled and not with the skin, for your two cups of vegetables. Don't be afraid to add some cajun spice to make them even tastier!
